Sweet Alabama Pecan Bread

 

Ingredients:  

  • 1 cup granulated sugar  
  • 1 cup packed light brown sugar  
  • 1 cup vegetable oil  
  • 4 large eggs  
  • 1 teaspoon vanilla extract  
  • 1 ½ cups all-purpose flour  
  • 1 teaspoon baking powder  
  • ¼ teaspoon salt  
  • 1 ½ cups chopped pecans  

Instructions:  

  •  Preheat OvenStart by preheating your oven to 350°F (175°C). Grease and flour a 9x13-inch pan lightly.
  •  Mix Wet IngredientsIn a large mixing bowl, whisk together the vegetable oil, brown sugar, and granulated sugar until it's all mixed well.
  •  Add Eggs & VanillaAdd the eggs one at a time and beat well after each addition. Stir in the vanilla extract afterward.
  •  Combine Dry Ingredients In another bowl, whisk together the flour, baking powder, and salt.  
  •  Mix Batter:  Slowly add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix.  
  •  Fold in Pecans:  Gently fold in the chopped pecans, making sure they are evenly distributed throughout the batter.  
  •  BakePour batter into prepared baking dish and smooth out evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center of the bread comes out clean.
  •  Cool & ServeLet the bread cool in the pan for approximately 10-15 minutes before cutting. Serve warm or at room temperature.

Tips & Variations:

✔ To add some moisture, simply add in ¼ cup of sour cream or buttermilk.

✔ Add ½ teaspoon of cinnamon for a pinch of spice.

✔ Add a glaze on top by mixing together 1 cup of powdered sugar and 2 tablespoons of milk for an extra sweetness.

✔ Top it with butter or cream cheese for an actual special treat.
