Ingredients:
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 ½ cups chopped pecans
Instructions:
- Preheat Oven: Start by preheating your oven to 350°F (175°C). Grease and flour a 9x13-inch pan lightly.
- Mix Wet Ingredients: In a large mixing bowl, whisk together the vegetable oil, brown sugar, and granulated sugar until it's all mixed well.
- Add Eggs & Vanilla: Add the eggs one at a time and beat well after each addition. Stir in the vanilla extract afterward.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt.
- Mix Batter: Slowly add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix.
- Fold in Pecans: Gently fold in the chopped pecans, making sure they are evenly distributed throughout the batter.
- Bake: Pour batter into prepared baking dish and smooth out evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center of the bread comes out clean.
- Cool & Serve: Let the bread cool in the pan for approximately 10-15 minutes before cutting. Serve warm or at room temperature.
Tips & Variations:
✔ To add some moisture, simply add in ¼ cup of sour cream or buttermilk.
