Fluffy Pancakes with Strawberry and Syrup

Fluffy Pancakes with Strawberry and Syrup 🍮

Ingredients:

  • 1 ½ cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • Pinch of salt
  • 1 large egg
  • 1 ¼ cups milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Fresh strawberries for topping
  • Maple syrup for drizzling

Instructions:

Step 1: Prepare the Dry Ingredients

  1. Mix the dry ingredients: In a large mixing bowl, combine 1 ½ cups all-purpose flour, 2 tablespoons sugar, 1 teaspoon baking powder, ½ teaspoon baking soda, and a pinch of salt. Whisk these ingredients together to ensure they are evenly distributed. The baking powder and baking soda will help the pancakes rise and become fluffy.

Step 2: Prepare the Wet Ingredients

  1. Whisk the wet ingredients: In a separate bowl, beat 1 large egg. Then add 1 ¼ cups milk, 2 tablespoons melted butter, and 1 teaspoon vanilla extract. Whisk everything together until smooth. The egg will provide structure, while the milk and butter make the pancakes tender.

Step 3: Combine Wet and Dry Ingredients

  1. Combine the wet and dry ingredients: Pour the wet ingredients into the dry ingredients. Gently mix the batter with a spatula or whisk until just combined. It’s important not to overmix—there should still be some lumps in the batter. Overmixing can make the pancakes tough, so stop as soon as everything is incorporated.

Step 4: Cook the Pancakes

  1. Heat the pan: Place a non-stick skillet or griddle on medium heat. Let it heat up for a minute or so. Test if the pan is ready by sprinkling a small drop of water on it—if it sizzles, it's ready.
  2. Cook the pancakes: Lightly grease the pan with butter or oil. Pour about 1/4 cup of batter onto the pan for each pancake. You can use a measuring cup or ladle for uniform pancakes. Spread the batter into a circle with the back of the spoon if necessary.
  3. Watch for bubbles: Cook the pancake for about 2-3 minutes until you see bubbles forming on the surface. The edges should also start to look set. This is your sign to flip!
  4. Flip the pancake: Use a spatula to carefully flip the pancake over. Cook for another 1-2 minutes on the other side, or until golden brown. Repeat this process with the remaining batter. You may need to adjust the heat to prevent burning.

Step 5: Serve the Pancakes

  1. Stack and serve: Once all the pancakes are cooked, stack them on a plate. For a finishing touch, drizzle with maple syrup and top with fresh sliced strawberries. You can add a dollop of whipped cream or even a dusting of powdered sugar if you like.

Enjoy your stack of warm, fluffy pancakes!

  • Serve immediately while they’re warm for the best flavor and texture. Perfect for a leisurely breakfast or a sweet treat any time of day!
