Creamy Sausage and Potato Soup
- Sausage: 2 cups of sliced sausage (smoked sausage or kielbasa)🍖
- Potatoes: 3 medium-sized potatoes, peeled and diced
- Carrots: 2 medium carrots, sliced🥕
- Onion: 1 medium onion, diced
- Garlic: 2 cloves, minced
- Chicken or vegetable broth: 4 cups🥘
- Heavy cream: 1 cup
- Milk: 1 cup🍲
- Butter: 2 tablespoons
- Flour: 2 tablespoons (for thickening)🥡
- Salt and pepper: to taste
- Fresh parsley: chopped, for garnish
- Bread slices: toasted, for serving🍞
- In a large pot, heat a little oil over medium heat.
- Add the sliced sausage and cook until browned.
- Once browned, remove the sausage from the pot and set it aside.
- In the same pot, melt the butter over medium heat.
- Add the diced onion and minced garlic. Sauté for 2-3 minutes, or until the onions are softened.
- Add the diced potatoes and carrots to the pot.
- Stir in the cooked sausage, mixing everything together.
- Sprinkle the flour over the sausage and vegetables. Stir well to coat everything in the flour.
- Cook for 1-2 minutes to remove the raw flour taste.
- Pour in the chicken or vegetable broth.
- Bring the mixture to a simmer, cooking for 15-20 minutes or until the potatoes and carrots are tender.
- Add the milk and heavy cream to the pot, stirring well to combine.
- Simmer for another 5 minutes to allow the soup to thicken and become creamy.
- Season with salt and pepper to taste.
- Ladle the soup into bowls.
- Garnish with fresh chopped parsley.
- Serve with slices of toasted bread on the side.
