Creamy Sausage and Potato Soup


 

Ingredients:

  • Sausage: 2 cups of sliced sausage (smoked sausage or kielbasa)🍖
  • Potatoes: 3 medium-sized potatoes, peeled and diced
  • Carrots: 2 medium carrots, sliced🥕
  • Onion: 1 medium onion, diced
  • Garlic: 2 cloves, minced
  • Chicken or vegetable broth: 4 cups🥘
  • Heavy cream: 1 cup
  • Milk: 1 cup🍲
  • Butter: 2 tablespoons
  • Flour: 2 tablespoons (for thickening)🥡
  • Salt and pepper: to taste
  • Fresh parsley: chopped, for garnish
  • Bread slices: toasted, for serving🍞


Instructions:

Step 1: Cook the Sausage

  1. In a large pot, heat a little oil over medium heat.
  2. Add the sliced sausage and cook until browned.
  3. Once browned, remove the sausage from the pot and set it aside.

Step 2: Sauté the Vegetables

  1. In the same pot, melt the butter over medium heat.
  2. Add the diced onion and minced garlic. Sauté for 2-3 minutes, or until the onions are softened.

Step 3: Add the Vegetables and Sausage

  1. Add the diced potatoes and carrots to the pot.
  2. Stir in the cooked sausage, mixing everything together.

Step 4: Make the Soup Base

  1. Sprinkle the flour over the sausage and vegetables. Stir well to coat everything in the flour.
  2. Cook for 1-2 minutes to remove the raw flour taste.

Step 5: Add Liquids

  1. Pour in the chicken or vegetable broth.
  2. Bring the mixture to a simmer, cooking for 15-20 minutes or until the potatoes and carrots are tender.

Step 6: Add Cream and Milk

  1. Add the milk and heavy cream to the pot, stirring well to combine.
  2. Simmer for another 5 minutes to allow the soup to thicken and become creamy.
  3. Season with salt and pepper to taste.

Step 7: Serve

  1. Ladle the soup into bowls.
  2. Garnish with fresh chopped parsley.
  3. Serve with slices of toasted bread on the side.
