Ingredients:
- Sugar – 500g
- Candied Ginger – 25g (finely chopped)
- Ginger Juice – 3 tbsp
- All-Purpose Flour – 450g
- Baking Powder – 2 tsp
- Zest of One Lime, chopped finely
- Butter – 500g
- Fresh Milk – 2 tbsp
- Salt – To taste
Preparation Method:
1️⃣ Preparing the Ginger Mixture:
- In a saucepan, mix together ginger juice and candied ginger.
- Add milk and warm the concoction on low heat.
- When it begins to boil, add salt and stir.
- Take off the heat and leave to cool.
2️⃣ Creaming the Butter and Sugar:
- Cream sugar and butter together in a bowl until smooth and silky.
- Add the lime zest and mix.
3️⃣ Preparing the Dry Ingredients:
- Combine flour and baking powder in a separate bowl.
- Mix thoroughly to distribute evenly.
4️⃣ Combining Everything:
- Slowly add the butter mixture to the flour mixture and mix until blended.
- Then, combine the ginger mixture and stir until well combined. The batter must be soft and fluffy in texture.
5️⃣ Baking the Cake: Butter a baking tray and pour in the cake batter. Preheat oven to 180°C (350°F) and bake for 40-50 minutes or until golden. Insert a toothpick into the center—if it's clean when it comes out, the cake is done!
